LINE ASSOCIATE
REPORTS TO: General Manager
PURPOSE OF THE ROLE
You help support the flow of products on the line in our Heart of House to help ensure perfect plates, speed, food safety and Guest Experience comes to life. Your job is to make sure that every order is prepared to perfection. Our team relies on you to keep our Perfect Plates moving down the line to ensure timely and efficient service to our Guests. You help to ensure that the final plate accompaniments are ready for platting and garnishes.
KEY RESPONSIBILITIES TO SUPPORT THE PERFECT GUEST EXPERIENCE
· Complete your online learning path prior to your first training shift.
· Begin every shift in a clean, pressed and complete uniform.
· Follow standards so that every all plates are prepared following the right portion size.
· As a line associate, you can work all areas of line to prepare products.
· Ensure the quality of food is outstanding each and every time and that product is prepared quickly and efficiently with pride and attention to detail.
· All products must be prepared according to the recipes, and they must be served to our Guests hot, perfectly cooked, timed and plated.
· Read and follow chits when preparing all products to avoid producing too little or too much.
· Follow all Swiss Chalet recipes, policies, standards and procedures.
· Make sure that all stations are “Guest Ready” before every revenue period.
· Support the flow of all food orders with great speed of service, while following FIFO (“First-In First-Out”) based on the Guest chit time.
· Make sure that all products are prepared to standard and served hot and perfectly plated for both Dine-In and Off Premise orders.
· Inspect the final plating to make sure the grill and other items on the plate are up to standard.
· Recover service errors quickly by prioritizing re-cook chits and ensuring a perfect quality re-cook.
· Conduct and record cooking and holding temperatures to ensure food safety standards are never compromised
· Complete the wastage sheet.
· Maintain line equipment at the required temperature – not too high, not too low; this guarantees the best quality cooking.
· Hold foods no longer than the maximum time and shelf life for each product. We depend on you to make sure that our Guests always receive fresh, consistent product.
· Perform cleaning on a regular basis. A well-maintained grill makes your job easier and safer, and it helps you produce quality products that meet our standards.
· Keep your work area, utensils and production equipment clean and sanitized at all times.
· Maintain organization of all food storage areas and adhere to cleaning schedules as assigned.
· Work in a safe manner, following all standards to ensure own personal safety.
KEY RESPONSIBILITIES TO SUPPORT THE PERFECT GUEST EXPERIENCE
· Maintain good personal hygiene and follow hand washing standards.
· Be thoroughly familiar with the causes of food contamination and the methods of prevention and follow all food safety standards and systems (including HACCP and WHMIS).
· Keep floor areas clean, dry and free of obstruction; use wet floor signs when applicable.
· Use personal protective equipment (PPE) as required by SDS information.
· Help keep the Heart of House (HOH) a safe working environment for everyone on your team. Always perform your tasks safely and to standards, and work with your team to recognize and correct unsafe practices.
· Complete opening and closing duties efficiently and safely, using the correct procedures.
· Complete all daily, weekly and monthly side work as assigned.
· Be a team player; support other Associates when you see that they need help.
· Be sure to ask for help when you need it.
